
Sardines are an excellent source of omega-3 fatty acids and are incredibly versatile. These sardine toasts pair tahini and harissa for a bold, flavorful bite with plenty of depth. This no-cook recipe is perfect for a savory breakfast or a light, satisfying lunch.

- 4 slices thick-sliced whole grain bread, toasted
- 2 (4.4 oz) cans wild sardines, drained
- 2 tomatoes, thickly sliced
- 1 lemon, juiced and zested
- 2 Tbsp tahini
- 2 Tbsp extra virgin olive oil
- 2 Tbsp parsley, chopped
- 2 Tbsp pickled red onion
- 1 Tbsp harissa paste
Directions

In a bowl, combine tahini, harissa paste, lemon juice, half of lemon zest, olive oil, half of the chopped parsley, and salt and pepper to taste. Whisk to combine.

In a separate bowl, gently mash the sardines with a fork until chunky. Add to harissa sauce and mix to combine.

Place 2 tomato slices on each piece of toast slightly overlapping. Divide sardine salad mixture between toasts and top with pickled red onion. Garnish with remaining parsley and lemon zest.
Note: If you can’t find harissa, you can use tomato paste and a pinch of smoked paprika.
